There's still a lot of symbolism involved in making crêpes. A tradition dating back to the 5th century and linked to a fertility rite which consists of blowing up the pancakes with the right hand while holding a gold coin in the left hand in order to enjoy prosperity throughout the year. The pancake must fall correctly back into the pan for prosperity to be guaranteed (with a little honey of course).
